FAMILY RECIPE: Shrimps and Veggie Spaghetti

Your family will love this yummy recipe, suitable for lunch or dinner. Try it out this weekend.

Ingredients: Spaghetti (preferably brown), spinach (cut), garlic cloves (minced), onions, red peppers (big and small), tomatoes, shrimps, chicken; boiled and shredded

Preparation

-Peel off scales on shrimps, wash thoroughly and place in a pot of boiling water, add salt, seasonings and onions. Cook for about 10 mins; remove shrimps from pot and set aside.

-Wash pepper combo (red peppers, tomatoes) and onions. Dice them.

-Place a saucepan over medium heat, add 2 tablespoons of olive oil, heat for 2 mins and then add the diced peppers and onions.

-Sauté for 5 mins and add shredded chicken, seasoning, salt, minced garlic and other spices. Sauté for another 2-3 mins, then add the shrimps.

-In a separate pot, cook spaghetti for about 30 mins and drain (or better still, follow the instructions on the food-pack), adding a pinch of salt only.

-Pour spaghetti into sauce, add spinach and mix thoroughly. Cover pot and allow to steam for few minutes.

-Serve.
