FAMILY RECIPE: Plantain Cakes Served With Beans

Want to try out a Ghanaian cuisine suitable for the whole family? Here’s an easy to prepare and very tasty recipe with ripe plantains. If you’ve got over-riped plantains at home, this recipe will come in handy.


3 over ripe plantain (mashed)
1 small onion
Thumb size ginger
Pepper (depends on how hot you like it)
1/2 tspn cloves (optional)
4 tbspn flour
Palm oil

How to prepare

Blend pepper, onion, ginger and cloves together. Mix spices in mashed plantain and add salt to taste. Add flour and mix the batter together.
In a non- stick frying pan, sprinkle in a little palm oil. Allow to heat on a medium heat. Drop a little of the plantain mixture into the pan and use a spoon to spread it into a flat circular shape.
Allow to fry until firm, turn it over and press on it to flatten some more. Repeat the process until slightly brown. Serve warm with bambara beans or any beans and stew of choice.
