FAMILY RECIPE: Quinoa Salad

Hey, mums! Hope you are having a very good start to the year. Thought to share this yummy salad recipe. I love this salad! And trust me, your family would too.

You’ll need
4 dl cooked quinoa (instructions on package)
2 fresh paprika (red and green chopped)
400 g grilled meat/chicken (cut into smaller pieces)
2 large tomatoes (chopped)
1 large onion (chopped)
1dl green peas (cooked)
2medium sized carrot (grated)
1 tbsp tomato paste
1 tbsp cooking oil
150 g cherry tomatoes.
Seasoning to taste

How to prepare
Fry onion in oil until soft. Add tomatoes and allow to cook for 2-3 minutes. Stir in the paste, a little seasoning and cover to cook for extra 3 minutes. Stir in grilled meat and lower heat. Allow to simmer for another 3 minutes. Set aside to cool.
In a large salad bowl, mix cooked quinoa and tomato sauce together. Add all veggies and enjoy!
