FAMILY RECIPE: Swedish Sandwich Cake

Swedish sandwich cake is very easy to prepare and you can pretty much fill the bread with anything. It’s a quick recipe that most of my guests love, especially kids as it’s a bit sweet, giving them the impression of eating a regular cake other than a full meal. It’s very filling as well. Great for get-togethers, mini parties or just an easy treat for the whole family.

You’ll need

30 slices of bread (crust removed)
Assorted canned fruits (pear, pineapple, apple and peach chopped)
300 g liver paste (organic)
4-6 eggs (cooked and sliced)
Smoked ham (sliced)
500 g peeled skrimps (cooked)
200 g mayonaise (egg based)
4 dl whipped cream
2 dl mayonaise

How to prepare

Mix 2 dl mayanaise, 4 dl whipped cream and fruits together evenly. Set aside in a refrigerator to cool.
On a big tray, arrange side by side 8 slices of bread in 4 rows. Each forming a rectangle. Spread the lever paste on the bread and cover with another layer of bread- repeating the same process. Spread the creamy mixture evenly on the second layer of bread and cover with another bread layer. making it a third layer.
Spread the mayonaise evenly on top of the bread and on the sides. Cover all sides of the bread with the slices of ham. Arrange the sliced eggs nicely on top and garnish with shrimp or any sliced vegetable or fruit of choice. Cover with a thin plastic wrap and allow to cool in the refrigerator for at least 2 hrs. Serve cold with warm tea or juice.
