FAMILY RECIPE: Zucchini & Carrot Noodle

Hey, mums! Here’s an extra yummy way to get your kids to eat more veggies this weekend.

You’ll Need
1 large zucchini
1 large carrot
1 small onion
300 g minced meat
2 medium sized tomatoes (chopped)
2 tbsp cooking oil
Seasoning
Pepper
1 tbsp paprika
2 grains of selim (grounded)
3tbsp tomato paste
1-2 bay leaves

How to prepare
Fry onion on medium heat for 2 minutes. Add tomatoes, paprika, pepper and some seasoning. Allow to cook until tomatoes are very soft and mashy. Mix 2dl water with tomato paste and pour it in. Stir in minced meat, bay leaves and grains of selim. Leave it to cook for 10 minutes or until it thickens. Adjust seasoning to taste. Turn off heat and set aside. Cut zucchini and carrot into strips and add as noddles. Stir everything together evenly. Let it sit for 2 minutes to soften and serve warm.

NOTE: You can use a mandolin or a normal potato peeler to cut the Zucchini and carrot.
