Hey, mums! Here’s a nutritious, easy-to-prepare and very yummy recipe you should absolutely treat your children to this Summer holiday. Excite their taste buds and have them yawning for more!
5 medium size potatoes (chopped and cooked)
1/2 dl spring onions (chopped)
3 eggs (cooked and mashed)
1 tbsp fresh parsley (chopped)
2 large carrots (shredded)
1 cup salad (chopped)
All purpose seasoning
1/2 tsp thyme
Some black pepper
3-4 tbsp mayonnaise
1/2 tbsp fresh lemon juice

How to prepare
*Pour the cooked potatoes into a large bowl
*Add eggs, seasonings, thyme, black pepper and lemon juice
*Stir everything together evenly
*Add carrots, spring onions, parsley and salad. Mix everything together
*Stir in mayonnaise and adjust seasoning to taste
TIP: Be sure to cut the veggies into really tiny pieces to make it chewable for toddlers.
You can cook the potatoes with some all purpose seasonings; tastes better.
