FAMILY RECIPE: Cauliflower Crust Pizza

A few years ago, there was this trend about using cauliflower as pizza crust that everyone thought was nice. However, the recipes on the Internet were all the same and even though I liked it when I tried it, I got tired of the taste quite quickly, making it difficult for me to finish a slice. So, I decided to make something that suits my African taste not too European or African; something that my family and I would absolutely enjoy. I subsequently came up with this recipe.

The fun thing about making this pizza is that you can garnish with just about anything. We make it every second week of the month, and even my toddler is allowed to garnish his own pizza. It has been a family favourite for 3 years now because it’s tasty, healthy and most importantly, not packed with too many calories. I’m sure your family will love it too.

Ingredients

Cauliflower crust pizza
3 cups shredded cauliflower
1 dl flour (abt 50 grams)
3 tbsp yellow corn flour
1/3 tsp Oregano
½ tsp Rosemary
Black pepper
Seasoning
Salt
1 egg
Some shredded Cheese (optional)
Parchment or baking sheet paper

How to prepare
*Preheat oven 200°C
*Fry the cauliflower without oil on a low medium heat or microwave or bake in oven for 5-7 minutes to remove some of the water from the cauliflower
*Add dried oregano and Rosemary to it and set aside to cool a little
*Pour the warm cauliflower in a bowl and add all the flours, pepper and salt
*Mix everything together evenly. Add egg and, or some cheese. Mix thoroughly
*Place a parchment paper in a baking tray. Mold the cauliflower mixture into desired shape on the tray and bake in oven for 20-25 or until lightly brown


*Garnish it with your desired pizza sauce and vegetable
*Sprinkle a little seasoning on top
*Bake for another 10 minutes or until cheese is all melted
