Family Recipe: Spicy Chicken Filled Taco

Tacos are a traditional Mexican dish consisting of a corn or wheat tortilla folded or rolled around a filling. A taco can be made with a variety of fillings, including beef, chicken, seafood, vegetables, and cheese, allowing great versatility and variety.

It is easy to make and almost all its ingredients are readily available in Nigeria, if you do not find one or two of the ingredients, you can improvise, like we said taco is quite a versatile dish.

Tacos are generally eaten without utensils, often garnished with salsa, chili pepper, avocado, guacamole, cilantro (coriander), tomatoes, onions, and lettuce.


  • 1 pound skinless and boneless chicken breasts halves cut into bite size pieces.
  • 1 cup lemonade
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 1/2 dark soy sauce
  • 1/2 teaspoon garlic powder
  • Onion
  • 1 bay leaf
  • 1 package corn tortillas
  • 1 head lettuce, shredded
  • 2 large tomatoes
  • 1 package shredded sharp Cheddar cheese
  • 1 jar salsa
  • 1 container sour cream
  • Salt
  • Cilantro

  1. Preheat oven to 400°.
  2. Season chicken breasts with ½ teaspoon of salt and ½ teaspoon pepper and place on baking sheet.
  3. Bake chicken for 13 minutes or until internal temperature reaches 165°, refrigerate.
  4. In a food processor, combine diced tomatoes, salt and pepper, cumin, chili powder and 1 tablespoon of chopped cilantro. Puree until ingredients are combined.
  5. Shred chilled chicken into small pieces. In a large sauté pan,add bay leaf, combine 1 cup puree mixture with shredded chicken and simmer on low heat for 20 minutes.
  6. Serve atop warm corn tortillas and top with red onion, remaining puree and remaining 1 tablespoon cilantro. Garnish with lime wedges or avocados as you please.

You can make a side peppered sauce to go with it, if you desire some more spicy flavour.
