Coconut Rice With Goat Meat Sauce, Peppered Snail & Gizzard

Try out this yummy combo for lunch or dinner this New Year:

Ingredients for the Coconut Rice: Basmati Rice, Sunflower Oil, butter, Coconut Milk, Onions, Meat or Chicken Stock, Ground Dry Chili Pepper.

Ingredients for the Assorted Meat Sauce: Red Peppers, Chili (rodo), Green Pepper, Red Onions, Salt, Sunflower Oil, Seasonings, Spices, Gizzard, Goat Meat, Assorted Cow Meat, Snail, ground dry chili pepper.

Coconut Rice
-Under cold running water, wash the rice thoroughly, until the water is clear.
-Pour the washed rice inside a big pot
-In a bowl, mix the coconut milk and a little meat or chicken stock together and pour over the washed rice inside the pot, cover it with a lid and place on a high heat to boil
-Once bubbles start to form, reduce the heat to low heat, add salt, seasonings (optional) and ground dry chili pepper
-Coconut rice is ready to serve

Goat Meat Sauce
-Wash the goat meat thoroughly and then cut into small sizes
-Put the meat in a pot; add salt, seasonings, spices and onions
-Allow meat to cook for about 40-45minutes
-Wash the peppers and onions and blend slightly (it should still be rough)
-In a separate pot, add some oil and fry the blended pepper for like 15minutes over a medium heat, add seasonings, salt and spices (as desired) and allow to fry for an additional 5minutes
-Drain the stock from the goat meat and pour the fried sauce over it, add chopped onions, big red peppers and allow to fry for some more 5minutes and it’s ready to serve.

Peppered Snail & Gizzard
-Wash the snail and gizzard thoroughly
-Follow the same procedure to cook them in separate pots
-Place the pots containing the gizzard and snail over a medium heat, pour in boiling water (little amount); add salt, seasonings, onions, spices and ground dry chili pepper. Allow to cook for like 10minutes (both meats should not be tender because it would lose its appeal)
-Once cooked, put the gizzard in an oven or fry slightly to drain the excess water off
-Wash all peppers and chop. Chop the onions as well.
-In another pot placed over a medium heat, pour in some sunflower oil, allow to heat for 1 minute, then add the chopped peppers and onions. Add salt, seasonings, spices to the mixture and allow to cook for 2-3 minutes
-Place the Gizzard and Snail in the pepper sauce and allow to sauté for like 5minutes.

Both sauces (Goat meat, and Peppered Snail and Gizzard) are ready to serve with Coconut Rice (or any of your preferred white rice dishes).
