Recipes Your Kids Will Love: Yam-Beet Tart

Hey, mums! It’s Tuesday again – time to share another easy-to-prepare and yummy recipe. I’m sure you’ll love this too.

Ingredients

3 slices of Yam (about 3cm thick)
2 medium size beetroot
1 small red onion
1 egg
1 medium size smoked Salmon fish/any fish of your choice
2 cloves of garlic chopped (optional)
Cooking oil
1 teaspoon nutmeg (optional)
All purpose seasoning

Preparation

*Cook beetroot till very soft. Add yam and allow to cook until the yam is very soft.
*Mash the yam and beetroot. (Note: Let it be lumpy. Don’t mash it until everything is smooth.) Mash in the smoked salmon fish with your fingers.
*Add chopped onion, garlic, nutmeg and egg. Add a teaspoon of all purpose seasoning to taste. Add more egg if the mixture is very thick. It has to be soft.
*Preheat the oil in a pan until very hot.
*Now take a little of the mashed yam with your hand and mold it to the shape you want and then put it in the oil to fry. Allow to fry until lightly brown.
*Serve warm with grated carrot and blueberry jam, lingonberry jam or ketchup.
