FAMILY RECIPE: Macaroni Casserole with Ugwu & Beef

Treat your family to this tasty recipe this weekend. It’s suitable for lunch or dinner.

Ingredients: Macaroni, Olive Oil, Salt, Chicken Seasonings, Red Onions, Big Red Pepper, Chili (rodo; optional), Pumpkin Leaves (Ugwu), Cottage Cheese or Butter (optional), Lean Beef.

Preparation

*Wash and cook the beef thoroughly, add sliced onions and other seasonings as desired. When properly cooked, remove from pot and cut the beef into thin slices or dice them (whichever one is preferred)

*Dice the big and small red peppers and some red onions

*Wash and slice the pumpkin leaves

*In a medium-sized pot, cook the macaroni for about 8-10minutes in hot boiling salted water; drain the water and set aside.

*In another saucepan, over medium heat, put some olive oil, add the shredded or diced beef, stir for a few minutes and add the diced red peppers and onions.

*Add salt and seasoning to taste, add the pumpkin leaves and stir for a few more minutes.

*Add the cooked macaroni; stir over medium heat until all the liquid in the food is almost dry.

*If you like, add cottage cheese or butter and stir for a minute until creamy; that should take about 1 minute.

*Serve.
