FAMILY RECIPE: Chicken, Egg & Potato Salad

Treat your family to this tasty and nutritious recipe this weekend. For more wholesomeness, I prefer to include steamed spinach and ugwu leaves. It’s packed with nutrients including carbohydrate, fat, protein, iron, zinc and vitB6.

Ingredients: Olive Oil, Salt, Black Pepper (Ground); Spinach and Ugwu Leaves; Eggs, Irish Potatoes

Preparation

*Boil the potato with a pinch of salt (until it is tender enough); then dice

*Boil the egg (until properly cooked)

*Boil the chicken with preferred spices (chicken seasoning, curry, thyme); add salt, onions and diced tatashe and rodo (fresh chili). Please note: remove the skin of the chicken prior to cooking.

-When the chicken is almost cooked, add some olive oil to it, steam for a few minutes, remove from the pot and shred (according to your preferred shape and size)

-Steam the spinach and pumpkin leaves with a pinch of salt and chicken seasonings (slightly for about 5 minutes), remove from the saucepan and slice

-Add shredded chicken, sliced hard-boiled eggs; and diced potatoes.

Your salad is ready to eat!
