Quick Weekend Snack: Mini Sweet Potato Bread

Here’s another tasty bread recipe your kids will love.
My son doesn’t like eating cooked sweet potatoes, so I have been trying hard to come up with something made with sweet potatoes that he would like, and this recipe was a major hit…LOL!
I made it out of left over cooked sweet potatoes. You should try it out too.
Ingredients
120 grams sweet potatoes (cooked)
1 egg
50 grams banana (or half of a medium size banana)
3 tbsp butter
1 dl coconut flour
1 tsp cinnamon
Greaseproof paper
Preparation
Preheat oven to 200 degrees celcius. Mash the cooked potato in a mixing bowl, mix in the coconut flour. Add butter, eggs, banana and cinnamon. Blend all the ingredient with a hand blender. Mold with hand to desired shape and place them on a greaseproof paper. Bake in oven for 15-24 minutes, depending on the thickness of the bread.
Serve warm with a cup of cold milk.
