WEEKEND SNACK: Ghanaian’s Etor

Etor is the Ghanaian name for mashed ripe plantain, and it’s my family’s all-time favourite. Your family will love it too.
Ingredients
2 half ripe plantain (hard)
1 small chilli pepper
1 medium size red onion
2 tbsp peanut butter
A handful roasted groundnut
140 g salmon fish (smoked – optional)
1/4 dl palm oil
How to prepare
Peel and boil plantain until fully cooked and mash. Chop onion. In a mortar and pestle, grind onion, pepper and peanut butter until very smooth. Add plantain and fish. Mash them together. Fry a little onion in the palm oil and add to the mashy mixture, evenly. Add the groundnut and serve warm with cooked eggs or salmon fish.
