FAMILY RECIPE: Chicken Light Soup
By F.C.
It’s weekend again, and here’s a yummy soup to treat your whole family to.
You’ll need
500 g chicken with bones (cut into pieces)
1 small onion (chopped)
2 medium size onions
3 grains of selim (a.k.a hwentia or negro pepper) grounded or 1/2 tsp powdered one
3 large tomatoes
2 garlic clove( grounded)
Thump size ginger( grounded)
1 chicken seasoning
2 tbsp tomato puree
1 cherry pepper (more if you want)
Salt
Water
How to prepare
Place the chicken in a large sauce pan. Add garlic, ginger, grains of selim and chopped onion. Add a little water and then add the seasoning and boil. Let it cook for 15- 25 minutes depending on how hard the chicken is and stir consistently. Add tomatoes, onions and pepper. Leave it to cook until the veggies are very soft. Take them out and blend them and then put them back in. Add some water and stir in the tomatoe puree. Let it cook for 20 – 25 minutes or until all the foam that forms on the surface disappears and a thin layer of oil appears (then you know the soup is ready). Season again if need be. Serve warm with fufu, banku or rice.
