BABY RECIPE: Aubergine Sauce & Pasta

Hey, mums! Here’s a very wholesome and yummy recipe your baby will absolutely love. Appropriate from 12 months.

Ingredients
1 small aubergine or 4 medium size garden eggs (cut into bits)
1 medium onion (cut into bits)
1/2 of small onion (chopped)
2 garlic cloves (cut)
2 tbsp tomato paste
1/2 tsp thyme
1 dl Green peas
1 large bay leaf
1 tsp seasoning
A pinch of black pepper
250 g sausage (cut into bits)
4 tbsp olive oil
2 tsp maple syrup or substitute
3 dl cooked pasta (very soft)

How to prepare
1. Place aubergine, sausage, large onion and garlic in a blender and pour a favourable amount of water on it. Blend until smooth and set aside.
2. Heat oil in a frying pan on medium heat. Fry onion until a bit transparent.
3. Stir in blended mixture, bay leaf, thyme, pepper, tomato paste, peas and seasoning.
4. Cover to cook for 10-15 minutes. Stir consistently.
5. Adjust consistency to taste with water.
6. Stir in maple syrup and turn heat off.
7. Mix in cooked pasta and serve warm.
