Simple Recipes Your Kids Will Love: Yam Porridge and Plantain

This recipe is a regular in my menu plan. It’s a tasty delight my daughter simply can’t resist!
Yam Porridge And Plantain
Ingredients:
Yam sliced into small chunks
1 plantain diced into tiny cubes (to sweeten)
5 plum tomatoes, blended
Fresh pepper, blended
Smoked titus fish, washed and fairly mashed
Small bunch of pumpkin leaves (UGWU), chopped
Vegetable oil
Onions, chopped
Grounded crayfish
Chicken flavour seasoning cubes
Salt to taste
Preparation
Wash yam, cover with water and set aside. In a big cooking pot, heat up a small quantity of vegetable oil. Add the onions and saute till cooked. Then, add the blended tomatoes and fresh pepper. Sprinkle in some salt to taste and add 2 cubes of chicken flavour seasoning. Cover and boil for about 10 minutes at low heat.
Afterwards, add the yam chunks, diced plantain, washed smoked titus and grounded crayfish, and add enough water to cover the yam. Stir together and cover to boil for about 20 minutes, occasionally turning to help achieve the ‘porridgey’ consistency. Add more water if required. Once yam is soft and cooked, add the washed chopped Ugwu and stir. Cover and simmer for about 3-5 minutes so that the vegetable is cooked but still green and crunchy. Serve with cold water and a slice of lemon.
