FAMILY RECIPE: Chicken Salad

Hey, mums! Here’s a highly nutritious and tasty recipe to bring to the table this weekend:

You’ll need

For Hot sauce:
2 garlice cloves (chopped)
3 medium size tomatoes ( chopped)
2 medium size onion (chopped)
Some fresh chilli pepper
1-2 tbsp honey/ sugar (optional)
I tbsp white wine vinegar (optional)
1 tbsp dried thyme
1 tsp all purpose seasoning or salt.
2 tbsp olive oil
Mix everything together in a blender.

Salad:
Some lettuce (shredded)
100 g snow peas
200 g cherry tomatoes
1 red onion( diced)
1 medium size cucumber( sliced)
3 thick boneless chicken breast ( sliced)
2 All purpose seasoning
2 tbsp olive oil

Preparation
Mix lettuce, peas, tomatoes, onion and cucumber together in a bowl. Cover and set aside in the fridge.
Preheat oven 200°C. Place chicken in a bowl. Pour in oil, oregano and seasoning. Mix everything together evenly and let it sit for 10-15 minutes. Place chicken in a baking dish and bake for 30-40 minutes or until fully cooked.
Pour some of the hot sauce on the chicken and bake in oven for extra 5 minutes. Allow to cool and serve with the salad.
