FAMILY RECIPE: Carrot Bread

So, I came up with this bread the other day after making a carrot juice with my juicer. I didn’t want to throw away the flesh from the carrot, so I decided to make a bread out of it and it turned out really well. It’s soft, sweet and healthy. We all enjoyed it, and I’m your family would too.

You’ll need
270 g grated carrot (liquid squeezed out)
4 dl flour
2 dl brown sugar/ 1/2 dl pure honey
3 dl almond milk or milk of choice
1 dl butter (melted)
1 tsp cinnamon
1 tsp baking powder
3 tbsp psyllium seed (optional)
1 egg
1/2 dl pumpkin seeds
1/2 tsp salt

How to prepare

Preheat oven 200°C. Mix all ingredients together in a mixing bowl. Spread the batter into a baking dish and bake in oven for 30-33 minutes. Allow to cool for 5 minutes. Enjoy with some cheese.
