YUMMY SNACK: Cabbage Rolls

Here’s a very yummy recipe to treat the whole family to this weekend.

You’ll need
1 medium size cabbage
1 tbsp paprika powder
1 large onion (chopped)
550 g minced meat
21/2 dl rice (uncooked)
4 tbsp tomato paste
3 tbsp fresh parsley (chopped)
Pepper
1 cup chopped kale or spinach
Seasoning
Salt
2 eggs

How to prepare

Preheat oven 175-200°C. Cut out the core of the cabbage. Carefully peel out the leaves one by one and cook on medium heat for 2 minutes. Remove leaves from boiling water and set aside. BE SURE TO KEEP THE WATER FROM THE CABBAGE.

In a large bowl, mix meat, onion, paprika, seasoning, parsley, salt, pepper, kale, eggs and rice together evenly.
Carefully trim the center rib of each leaf ( the hard part). Place a little of the meat mixture on one leaf and roll it over, covering the meat with the leaf. Fold the sides and place it in a baking dish. Repeat the process until the leaves are finished.

Pour the tomato paste in a bowl and mix it with some of the boiled water from the cabbage. Pour the mixture over the rolls. Bake in oven for 45 – 1 hour. Serve warm.
