DINNER RECIPE: Riced Cauliflower Chicken Stir Fry

Hey, mums! So, I decided to share one of my tasty, high protein and low calorie dinner recipes. Be sure to try it out this weekend.
You’ll need
1 small onion (chopped)
2 tbsp oil (olive or sesame)
1 garlic clove (chopped)
1 tbsp seasoning
1 large cauliflower
2 tbsp soya
2 small carrots (chopped)
1 dl peas (frozen)
2 chicken breasts
2 eggs
1/2 tsp black pepper

How to prepare
1. Shred cauliflower into a sandy texture by using a food processor or simply grate it and set aside.
2. Heat oil in a deep frying pan over medium heat. Add onion and garlic. Fry for a minute and stir in chicken and fry. 3. Add seasoning and keep frying till chicken is almost cooked. Add green peas and carrots. Fry for 3 minutes and add cauliflower. Stir in pepper.
4. Create a whole in the center of the mixture and pour in eggs. Stir everything together evenly and leave to cook for 3 minutes, stirring consistently.
5. Stir in soya and fry until cauliflower is soft to taste. Serve warm.
