Family Recipe: Potato & Chicken Soup

Here’s a tasty soup recipe to treat the whole family to this weekend.

Ingredients
300 g chicken breast (cut into bite sizes)
3 large potatoes (cut into smaller pieces)
2 leeks (chopped – white and light green part only)
1 tbsp garlic paste
1 tsp ginger paste
1 tbsp all purpose seasoning
Shredded parmesan cheese (cheese lovers only)
1 dl cooking cream
Pepper (black pepper)
Salt
2 tbsp corn starch (optional)
1 egg white (optional)
1 vegetable cube
8 dl water
2 tbsp olive oil
1 tbsp

How to prepare

Preheat oven to 250°C. In a large bowl, mix chicken, seasoning, starch, egg white, salt and 1 tbsp oil. Let it sit for 10 minutes and bake in oven until brownish. In the meantime, fry leek in another pot with the remaining oil until it begins to softens.

Add ginger and garlic and saute for another minute.
Add potatoes, cube and water and boil. Let it cook on low heat for 30 minutes and add cream. Allow to simmer for a minute and blend. Add chicken and pepper to soup. Serve warm with shredded parmesan cheese.
