Family Recipe: Unripe Plantain Moi-Moi With Sauce
The Nigerian Moi-Moi will never go out of vogue for food and tradition lovers. Almost every tribe in Nigeria makes Moi-Moi as an indigenous delicacy. Like with everything else, food is evolving and our famous Moi-Moi has a new twist.
Diabetics and other health-conscious folks can now enjoy Moi-Moi made from unripe plantain instead of the usual beans that it is made from.
Ingredients:
- 4 Unripe plantain
- 2 large tomatoes (Optional)
- 4 large Tatashe (red bell pepper)
- 1 medium-sized red onion
- Little water just enough for blending
- 2 stock cubes to taste
- Salt to taste
- 1/2 cup vegetable oil
- 5 hard-boiled eggs cut in halves. Or leave eggs out completely if you like.
- Leaves for wrapping/aluminum cups
Preparation:
Step 1:
Peel, chop and blend unripe plantains with tomatoes, tatashe and onion till very smooth. Add oil, salt and seasoning cubes to taste.
Step 2:
Wrap in leaves(if you are using leaves) or you could pour in milk tins and add boiled egg
Step 3:
Place in a steamer after wrapping and continue till the plantain is exhausted. Cook for about 30 to 45 minutes.
Step 4:
Turn off the heat, take off the lid on the pot and leave to cool a bit for a more solidified texture.
Step 5:
Serve with some delicious sauce and enjoy.
