Recipes Your Kids Will Love: Chicken-Couscous

Hey, mums! Try out this easy-to-prepare and yummy recipe. It may just become a family favourite.

Ingredients

1 small zuchinni (cut into smaller pieces)
1 small onion (chopped)
2 large tomatoes (chopped)
2 small carrots (chopped)
11/2 dl green peas
1 small red pepper (chopped)
3 medium size mushrooms (cut into smaller piece)
1 big chicken breast (boneless)
1 tsp black pepper
All purpose seasoning of choice to taste.
3 tbsp coconut oil
Salt (optional)

Preparation

*Fry onion in coconut oil on a medium heat. Let it fry for 2 minutes and add black pepper. Allow to fry until onion is slightly soft and add tomatoes and 1 tsp seasoning. Let it cook till tomatoes are soft.
*In a separate pan, cut chicken into pieces and add 1 tbsp season.  Add 2dl water and let it cook for 10 mins on high heat.
*Add carrots to the tomato sauce and let it cook till chicken is ready. Pick the cooked chicken and add to the vegetable mixture. Add the green peas, zuchinni, red pepper and mushroom and allow to cook for 10 mins. Pour the water from the cooked chicken into the sauce. Add salt if need be. Allow to cook for 2 mins. Blend the mixture into a paste with a hand blender. Serve with couscous or rice.
