BABY RECIPE: OKRO STEW
By F.C.
Here’s a tasty and quite nutritious traditional recipe you can introduce to your baby from 9 months.
Ingredients
2 onions (chopped)
2 medium size tomatoes (blended)
2 garlic cloves (optional)
A thumb size ginger (peeled and chopped)
400g fresh okro Chopped & cooked)
350g pork
1tspn black pepper
1 large garden egg (chopped & cooked)
1dl palm oil
Preparation
1. Take half of the chopped onion, garlic and ginger. Blend them until a very smooth paste is formed.
2. Cut the pork into smaller pieces. Put the pork in a cooking pan and add the mixture. Allow to cook until pork is very soft.
3. In another pan, fry onion until slightly soft. Add tomatoes, garden eggs and pepper. Let it cook on a medium heat for 5 minutes.
4. Add the pork, extra water (or use the water from the cooked pork). Allow to cook for another 5 minutes and stir in the okro. Lower the heat and let it cook for extra 3 imutes. Serve warm with very soft banku or amala.
