FAMILY RECIPE: Bitter Leaf, Spinach & Garden Eggs Stew

Hey, mums! Here’s another recipe your family would love. Be sure to bring it to the table this Easter season. Yum!
You’ll need
Some assorted steamed meat
7-8 medium sized garden eggs (cooked and mashed or blended)
3 medium sized tomatoes (chopped)
Pepper
1 medium sized onion (diced)
1 tbsp seasoning
Palm oil
125 g canned sardine (optional)
1 cup cooked bitter leaf and spinach

How to prepare
Pour a preferred amount of palm oil into a deep frying pan and allow to heat on a medium heat.
Pour in onion and fry for 2 minutes. Add tomatoes and sauté for 4 minutes and stir in sardines.
Add pepper, garden eggs and green leafs. Stir in seasoning.
Allow to cook for 3 minutes, stiring consistently.
Stir in assorted meat and cover to simmer for 4-5 minutes.
Adjust seasoning to taste.
Serve warm with plantain, yam or rice.
I usually cook this but without the bitter leaf very yummy. Will try with the bitter leaf next. Thanks Faustine and MIM.
