FAMILY RECIPE: Crispy Potato Hash Brown

Here’s another yummy recipe your family will absolutely love. It’s suitable for breakfast and lunch. You can also pack some in your child’s lunchbox to school.

You’ll need

4 medium size potatoes (peeled and grated)
1 small onion (chopped)
Oil
2 tbsp corn meal/corn flour
2 tbsp rice flour
All purpose seasoning
1/2 tbsp oregano
1 tsp paprika
1/2 tsp black pepper
A bowl of chilled water
Baking dish
Plastic film

How to prepare

*Soak potatoes in water for 20 minutes and preferably, place in fridge to bring out all the starch from the potatoes.
*Pour the water in the potatoes away.
*Carefully squeeze out remaining water from potatoes with your hand.
*Preheat oven 200°C
*Pour the potatoes on a clean kitchen napkin or tissue paper and squeeze out the remaining water from the potatoes – you want the potatoes dry.
*Pour the potatoes into a baking dish and bake in oven for 6 minutes.
*Allow to cool and transfer into a mixing bowl.
*In the meantime, heat a favorable amount of oil in a frying pan.
*Stir in paprika, corn meal, oregano, onion, black pepper, seasoning, and rice flour.
*Mix together evenly.
*Place the mixture on a chopping board and cover with plastic.
*Flatten it with rolling pin and cut into desired shape and size (You can choose to skip and shape each piece with your hand).
*Fry in oil until golden brown. Allow to cool and enjoy.
