Baby Recipe: Banana, Egg And Oat Pancakes

Purees are great and versatile no doubt but even kids can make do with some variety. Fluffy and fibre rich pancakes can be the solution you never thought of for your fussy eater. This recipe combines three simple ingredients, namely, banana, egg and oats.

What’s really great about this three-ingredient pancake recipe is that it takes just as little effort to prepare as most purees. A baby weaning pancake made from banana, egg, and oats ensures a healthy supply of energy, protein and fibre from oats, which not only aids digestion but makes the pancake more substantial and filling.

The recipe makes for pancake that is soft to eat, easy for babies to pick with their hands and is ideal for babies 6 months up.

Ingredients

  • 1 medium ripe banana
  • 1 medium egg
  • 1/4 cup oats

Preparation

Step 1

Mash up the banana in a bowl, break the egg in it and mix together.

Step 2:

Add the measured oats into the mix and stir together.

Heat a little coconut oil or melt some butter in a large frying pan, then add the pancake mixture with a spoon to the heated oil. Turn the pancakes to cook through. you should get 5 pancakes from the mixture.

Tips:

1. If your child does not like a lot of texture in their food, blend the oats in a food processor before incorporating it in the mix.

2. If you would like for your child to enjoy more flavour in his pancake, you can add some finely chopped strawberries or blueberries.
