FAMILY RECIPE: One Pot Rice

Here’s another yummy recipe to treat your family to this weekend.

You’ll need
2 dl hot/chilli sauce
1 large onion (chopped)
1 tsp garlic paste
350 g minced meat
2 tbsp tomato paste
165 g Cooked yellow
150 g mixed vegetables of choice
4 tbsp cooking oil
1/2 tsp kumin
1 tsp all purpose seasoning
Some pepper
300 g half cooked rice

How to prepare
Fry onion in oil on medium heat until slightly cooked. Stir in tomato paste, garlic, seasoning and kummin. Saute for 3 minutes and stir in hot sauce. Let it cook for another 2-3 minutes, stiring from time to time. Add meat, pepper and a little water. Cover and allow to cook for 10 minutes, stiring consistently.

Stir in corn and veggies. Add rice and lower heat. Cover and let it cook for 5 minutes. Enjoy!

Note: It’s very important that the rice is not fully cooked otherwise it will be all mashy or watery. Since the rice is half cooked, it will suck in all the moisture while it cooks and will make it come out with the right consistence.
