FAMILY RECIPE: Plantain Pottage with Kale & Carrot

Here comes another yummy recipe my family loves. I prepared it for some European friends recently and guess what? They emptied my pot and asked for the recipe…LOL! Try it out too this weekend.

You’ll need

3 large plantain (chopped into bits)
1 medium size onion (chopped)
2 medium size tomatoes (chopped)
1/3 dl palm oil
1 bay leaf
I large magi cube/ 1 tbsp seasoning of choice
200g kale/ spinach/ green leaf of choice.( chopped)
1 large carrot (chopped)
1 tbsp paprika
Pepper
250 g grilled turkey (chopped)

How to prepare

In a deep cooking pot, fry onion in oil until slightly tender. Add tomatoes, carrot, bay leaf, seasoning and salt, and cover to cook for 2 – 3 minutes or until tender. Stir in plantain with a cup of water and turkey. Cover to cook for 7 – 10 minutes. Add kale and leave to simmer for 3 minutes. Serve warm.
