Family Recipe: Spinach & Broccoli Pie

Hey, mums! Here’s another very tasty recipe for the whole family.

Ingredients & How to prepare

For pie dough
3 dl flour
125 g cold butter (cut into pieces)
3 tbsp cold water/milk

*Mix the butter and flour together into a sandy texture
*Add water and mix everything together quickly
*Flatten the dough in the pie dish and refrigerate for 30 minutes
*Preheat oven 220°C
*Place the pie dough in the oven for 10 minutes if it’s thicker

For pie filling
1 cup diced bacon
200 g chopped broccoli (lightly cooked)
1 onion (chopped)
Black pepper
3 eggs
A handful spinach (chopped)
2 1/2 dl milk/cooking cream
2 tbsp tomato puree
Some seasoning
Salt
11/2 dl shredded cheese

*Fry bacon without oil until all the fat is out. Add onions and black pepper
*Fry for two minutes and set aside
*Whip the eggs, milk, a little cheese and tomato puree together in a mixing bowl
*Add seasoning according to taste and set aside
*Bring out the pie crust. Fill it up with the fried bacon, broccoli and spinach
*Pour the egg mixture on it and top it up with the remaining shredded cheese
*Place in oven and bake for 25-35minutes, depending on the thickness of the pie crust
Enjoy with some fresh vegetable salad.
